Old Fashioned Southern Peach Cobbler Recipe

Standard

5-7 fresh peaches based on size, peeled, cored and sliced

• 1/2 cup granulated sugar

If using canned peaches, omit the sugar.

For the batter:

• 6 Tablespoons butter

• 1 cup King Arthur GF Flour https://a.co/d/00sFOi9B

• 1 cup granulated sugar

• 3/4 cup milk

Instructions

• Add the room temp sliced peaches and sugar together in a bowl and set aside. If the peaches aren’t very ripe, you might want to let them sit for a bit in the sugar until sugar is dissolved.

• Preheat oven to 350 degrees F. Slice butter into pieces and add to a 9×9 or 9×13 inch baking dish. Place the pan in the oven while it preheats, to allow the butter to melt. Once melted, remove the pan from the oven.

• In a large bowl mix together the flour and sugar. Stir in the milk, just until combined. Pour the mixture into the pan, over the melted butter and smooth it into an even layer.

• Spoon the peaches and juice (or canned peaches, if using) over the batter.

• Bake at 350 degrees for about 38-40 minutes. Serve warm, with a scoop of ice cream, if desired.

Note:

1. Most recipes call for cinnamon, brown sugar and other spices. I am a purest. Dough, peaches and butter work for this old girl.

2. You can use all-purpose flour. If you only have that available you will need to add 2 teaspoons baking powder and 1/4 teaspoon salt

Note: I have celiac. My go to/fave GF flour alternative is King Arthur Flour Measure 4 Measure Gluten Free Flour.
